Stuffed cabbage leaves
Continuing on the theme of making healthy, low-cost recipes with ingredients that have a long shelf life. This dish is comforting but not heavy and really delicious.
Steam green cabbage leaves.
Chop an onion and fry with 2 cloves of garlic. Then add half a chopped green pepper, fresh herbs like thyme, marjoram etc and fry.
Add a tin of whole peeled tomatoes.
Remove half the sauce. Add some brown rice, quinoa, peas, beans etc.
Take the cabbage leaves and fill each with the rice mixture and fold it like a wrap. Place in a lasagna dish.
Cover with the rest of the tomato sauce and then with grated mozzarella.
Bake in the oven.
