Lock-down Cabbage Patties:
For the lock-down period, my aim is to make healthy dishes, with ingredients that is not expensive and easy to make. I have collected a wide variety of fresh herbs, growing on my kitchen window sill for the period, which makes cooking a pleasure.
Boil 750g finely chopped cabbage for 7-10 minutes and then drain all the water off through a sieve.
Chop an onion and fry it with 2 cloves of garlic.
Mix the onion, cabbage, 2 eggs, 1/3rd cup of almond flour (or any flour), chopped coriander, chopped chives, salt and pepper.
Set aside for 10 minutes.
Oil your hands slightly and then form patties with the mixture.
Fry in shallow oil.
