Mike never does anything in small measures. When I asked him to buy aubergine, he came back with 4. As I hate waste, we ate aubergine done 3 ways.
Melanzane al forno
My all time favourite aubergine dish is “melanzane al forno” – basically baked aubergine.
Cut the aubergine lengthwise about 1,5 cm’s thick.
Bake it in the oven for a little while
Mix together chopped white onion, chopped tomato, chopped basil and diced mozerella with salt and pepper.
Place the mixture on top of the sliced aubergine, drizzle with olive oil and back.
Here I made the same but obviously quite different and not as delicious.
Hollowed out Aubergine
Ok, my recipe names are not very sexy but here is the recipe:
Cut the aubergine in half.
Hollow out the center.
Chop up the aubergine, chop tomatoes, fetta, olives, anchovies, salt and pepper.
Place back in the aubergine, drizzle with olive oil and bake.
